Hi guys,
So I know I'm not exactly fat, But there is still a few areas I wouldn't mind working on. I have my 21st on January 28th and I want to look my best, So I'm giving up everything that's nice!
I decided that instead of making excuses and waiting til the 1st I might as well get stuck in now. So I went to Tesco's and picked up everything that's low fat.
For dinner tonight I made a scrumdiddlyumptious meal and I thought I would share it with you! I'm all about the cheap food too. None of this M&S stuff! :P
Ingredients:
50g Sliced White Bread
Zest of 1 Lemon
A few fresh chives, Chopped
4 Salmon Fillets
100g Philadelphia Light with Garlic and Herbs
Reciepe:
Pre-heat the oven to 180.c/350.f/Gas mark 4. Place the bread in a food processor and blend the breadcrumbs. Grate the zest of one lemon. Mix the chives, Zest and breadcrumbs together.
Spread the salmon fillets with a thick layer of the Philadelphia and place on a lightly oiled baking tray. Top with the flavoured breadcrumbs, lightly pressing them into the Philadelphia. Bake in the oven for 20-25 minutes until cooked.
Cook the potatoes and whatever veg you like. I steamed Broccoli, Sugar Snap Peas and Carrots.
There is only 400kcal per portion.
It was absolutely delish, I would have gone back for seconds if I let myself. But no-one ever got skinny going back for seconds did they? ;)
I ate at 6pm and it filled me up. Then at about 8 I started getting peckish. Unlike the rest of the family I didn't dig in to the Ice-cream cake or the crisps. I went for this instead:
And I even managed to stop myself eating the whole thing. I just had a few spoonfuls to take the edge off my hunger... Now let's see if I can last the night without getting up and making a turkey and mayo sandwich *Dribble*!
